I recently discovered this quick, easy and thoroughly delicious recipe for a chipotle-lime marinade for steak (and shrimp too). As the days get shorter and the nights longer, this little kick of summer brings a bit of sunshine and warmth to indoor cooking.
Zest of two limes
Juice from two limes
Two Tbsp adobo sauce from a can of Chipotle peppers in adobo sauce
One Chipotle chile pepper finely diced
In a bowl put in all ingredients. Add salt and garlic to taste.
Spoon onto steak. let marinate for about 1/2 hour.
Broil in oven at 275 F (135 C) for about twenty minutes or until cooked to desired wellness.
Serve with baked potato and vegetable.
